Preparing a large meal in the middle of the week can be a stressful ordeal. So this week we searched for a quick meal you whip up in no time.
Oven Roasted Salmon and Asparagus
Season fillet salmon with salt and pepper. Place salmon skin down in a non-stick pan (or foil wrapper). Bake salmon 12-15 minutes until salmon is cooked through.
For added flavor: Add parsley, fresh garlic and sliced lemons to salmon before baking.
Salt and pepper a bunch of trimmed asparagus spears. Drizzle olive oil on spears and bake for 12-15 minutes on 450 degrees.
